Recipe - several varieties

1/4 cup bio indi flour
1/4 tsp non alluminium baking powder gluten free!!!
2 tbsp coconut milk powder
1/4 cup coyo yoghurt
1/4 cup coconut oil
4 banty eggs ( if you can get them now everyones gone nuts buying them - we have our own )
organic stevia liquid to sweeten
2 tbsp flax ( optional - not for ladies with thyroid issues )1/4 cup warmish water.
Mix up well. Get oil warm enough and sizzling ( coconut ) then turn down to 3. Make 1/4 cup little pancakes and turn frequently.
sweeten with tiny bit of maple syrup and dollup of coconut milk made creamy with a sprinkle of berries if you wish.

You cant cook it quicker than a frogspawn fritter.
Another of my inventions.
Prepare chia seeds the day before. I soak 24 hours because they hurt my joints otherwise. Cook red skin potatoes the day before too.
soak 4 tablespoons in 20 tbspns of boiling water. allow to cool. stir and refrigerate.
Mash cool potatoes add pinch gris salt. Add chia seeds. finely chop 1 shallot and add. tablespoon corriander leaf and good pinch mixed herbs. Juice of one lemon and add plus 5 drops of organic liquid stevia.
Heat coconut oil, make small patties and cook till sizzling then turn heat to 3. Cook both sides till brown.
I usually manage two or maybe three, but they are very filling and really tasty.
I think you could make them with sweet potatoes too but omit stevia. Get creative !

1 TEASPOON BICARB
1/4 TSP CREAM OF TARTAR (OPT)
75G GOATS MILK OR COCONUT MILK
ONE STEWED APPLE SWEETENED WITH ORGANIC LIQUID STEVIA
1 TSP OF COCONUT SUGAR (OPT)
MIX DRY THOROUGHLY
ADD APPLE AND TEN MILK TILL A DOUGH FORMS.
HANDLE AS LITTLE AS POSS
PUT STRAIGHT INTO GREASED MUFFIN TIN AND BAKE IN PREHEATED OVEN FOR 12-15 MINS AT 180. OR TILL GOLDEN BROWN,
SERVE HOT WITH GRASS FED BUTTER OR COCONUT OIL AND PUREE FRUIT.
